Toad in the Hole
8 large pork sausages1oz lard4oz flour1/4 teaspoon salt2 eggs1/2 milk1 teaspoon dried mixed herbs - optionalpepper
Cook sausages with lard for 10 mins on 220c Mix all other ingredients into a smooth batter Pour mixture on top of sausages and continue to cook in the HOT oven for 45 minutes ENJOY!
This was the first meal that my Mum made for my Dad once they were home from their honeymoon and he had returned to work. She told the story that she proudly placed the dish on the table only for my Dad to look at it and announce,'I don't like sausages'
