Stilton Soup

2oz butter
1 onion
1oz flour
1/2 pint milk
3/4 pint chicken stock
6oz Stilton (Could also be done with cheddar)
Pepper
4 tbs double cream

Fry onion. Blend in flour and milk. Add stock. Bring to the boil and cook for about 10 mins stirring until thickened. Remove off heat and add crumbled cheese and cream. Enjoy!
