Really Good Vegan Chocolate Cake

2 1/2 cups self raising flour
1 cup cocoa
2 1/2 cups caster sugar
1 tsp baking soda
1tsp baking powder
Mix together well add 2 1/2 cups soya milk, 1/2 cup sunflower oil 2 tbsp white vinegar. Mix well again and divide between 2 sandwich tins. bake for 35 mins at 180C This should then be cooled and spread with a vegan style butter icing. Enjoy!

    This was the 21st birthday cake I made for Rebekah, while in lockdown ‘20. It was the 1st time I made a vegan cake and I was given the recipe by Alex, Dads cousin, who owns and runs a vegan cafe in Huddersfield. To be perfectly honest I think it was brilliant and I would definitely make it again, even when the event doesn’t particularly call for a vegan alternative. It was that good!
