Pineapple Upside Down Cake
4oz butter 2ozDemerara sugar 1 drained can of pineapple rings 4oz butter 4oz marg 8oz castor sugar 8oz self raising flour 4eggs Pinch of salt 4 tbsp fruit syrup from canned pineapple tin Heat oven to 180c Melt the 4oz of butter and pour into deep tin. Sprinkle with Demerara sugar and then arrange pineapples on top of mixture. Cream butter and caster sugar. Add eggs, flour, salt and syrup. Spoon this mixture over fruit and bake for 35mins. Cool slightly before turning out.
