Lockdown Banana Bread
140g salted butter, softened140g caster sugar2 large eggs, beaten2 over-ripe bananas, mashed140g self-raising flour1 tsp baking powder1 tsp cinnamon1/2 tsp nutmegOptional Extras: 1/4 cup chia seeds or poppy seeds150g chocolate chipsTopping: 50g icing sugar1tsp lemon juice1-2tsp Water1/2 tsp cinnamon
Heat oven to 180°C/160°C fan/gas mark 4. Line a 2lb loaf tin with greaseproof paper or grease with a little butter. Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour. Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas. Pour into the tin and bake for about 40 mins or until a skewer comes out clean. Cool in the tin for 10 mins, then remove to a cooling rack. Mix 50g icing sugar with cinnamon. Add 1tsp lemon juice and 1-2 tsp water to make a thick runny icing. Drizzle over the cake and leave to dry before slicing.
