Festive White Chocolate & Cranberry Blondies
3 eggs
2 cups sugar
1 tsp vanilla essence
3/4 cup soft butter
2 cups plain flour
1 cup fresh cranberries
150g white chic chips/bits
Whisk eggs and sugar until thick, fluffy and forms ribbons when you lift the whisk. Leave for 7-8 mins, for the egg to expand Add softened butter, vanilla and mix for 2 more mins. Sift in flour and fold into mixture Fold in cranberries and chocolate chips. Spoon into a buttered baking try Bake at 150c for 40-50 mins, until skewer comes out clean Leave to cool, then cut and ENJOY!
