Cream of Lettuce Soup
1lettuce 2onions 2pints chicken stock Salt/pepper 25g butter 25g flour 1/4 pint milk 1/4 pint single cream Cook cut lettuce and onions in stock. In another pan mix flour into melted butter and gradually blend with milk/cream. Then boil mixture, stirring, till thickened. Add to stock and lettuce mixture and blend till smooth. Salt and pepper to taste and Enjoy xx This is a fab recipe as you can substitute the lettuce for a peeled cucumber or 350g asparagus or 175g fried mushrooms(with this one add the cooked mushrooms just before the final stage of blending all the other ingredients together) and hey presto! you have cream of cucumber, asparagus or mushroom soup

After Holly and Adam's wedding there was a lot of salad left over so I found this recipe to use up the lettuce.
