American Chocolate Fudge cake

American Fudge Cake
4oz butter
8oz dark soft sugar
2 eggs
1/4 soured cream
6oz plain four 
1tsp bicarbonate of soda
2oz Cocoa

Cream together butter, sugar then eggs and soured cream. Fold in the dry mixture and divide between 2, 8inch greased tins. Bake for 30-35 mins. Leave to cool. 

Filling 
2tbs Cocoa
2 tbs boiled water
4oz butter
5oz icing sugar
Vanilla essence
Mix together Cocoa and 2tbs of boiling water, into a paste. Cool. Beat together butter, icing sugar and essence. Beat together with Cocoa mixture and spread in centre of cake. 

Frosting
200g dark chocolate bar
2tbs Cocoa
1/4 double cream 

Melt chocolate. Beat Cocoa into paste with 2tbs of boiling water then mix with melted chocolate. Slowly whisk the cream into the chocolate till thick and smooth and spread over entire of cake.
