Carrot Cake

1cup sugar
1/2cup oil
2 eggs
11/2 plain flour
1/2 teaspoon salt
1teaspoon baking soda
1 teaspoon cinnamon
1/4 cup each of ground coconuts, chopped nuts and raisins
11/2 cup grated carrots

Combine all ingredients and bake in loaf tin for 40 mins at 200c or gas mark 6

This recipe can be easily doubled/tripled etc for more loaves
